Zapata Ranch
The dining experience at the Zapata is second-to-none. Breakfasts of eggs made to order, biscuits and gravy, warm pancakes, cereal, and fresh fruit are followed up by homemade lunches eaten on the trail or in our dining room. Dinners are expertly prepared each evening and presented with a flair for our guests to enjoy in our lodge-style dining room.
In this position, you will be in the kitchen full-time working closely with the chef to prepare breakfast, lunch, and dinner for guests and staff (there can be up to 30 guests at a time). You don’t need to have classic culinary training in order to apply for this internship; only a genuine passion for food, a willingness to learn, and an interest in making hearty and healthy ranch meals from scratch.
A typical dinner might include homemade bread, a large green salad with local produce and homemade dressing, bison lasagna, crispy roasted broccoli, and a fruit cobbler. We alternate between classic comfort foods and more elevated meals, such as a vibrant green salad with a mustard vinaigrette, roast beef, Yorkshire pudding, mashed potatoes, roasted carrots, and sticky toffee pudding. We strive to use only local produce, as we live in an area with bountiful growers and gorgeous selection.
You will be working 6 days a week and you will be required to cook one day a week on your own (without the chef). You will be paid a monthly stipend, plus room and board and all meals. On the day that you cook on your own, you will be paid an hourly rate.
On your days off you have access to some of the most beautiful land in Colorado. We are minutes away from the Great Sand Dunes National Park (you will have a park pass as part of your stipend), Zapata Falls, Blanca Peak, and only an hour away from Taos New Mexico, to name a few. If you like hiking, birding, or just being outdoors generally, this will be a paradise for you. [FILLED]
