POSITION SUMMARY

As Head of Food and Dining, your primary responsibilities include ensuring all guests have the vacation of a lifetime, and overseeing the food and beverage program at Zapata Ranch. You must present a smart and professional appearance, be warm, gracious and able to think on your feet at all times. Safety is our number one concern, followed closely by ensuring that all of our guests have the best vacation of their life.

We see the food and dining experience as a critical part in the overall Ranchlands experience. You will be required to oversee and manage this experience while working closely with other area managers to ensure an excellent experience and seamless operations both front and back of house related to all food and dining. You will train your staff to deliver the same standard as yourself in your absence and maintain good records of ordering and budget. You will embrace a host role and be aware of our guests prior to arrival, learning who they are and any details about their food and beverage preferences to exceed expectations. At each meal and touch point with guests, any information that you learn that could improve their stay will be something that you decide how to best implement with the goal of delivering the best possible experience to them. The food and dining program is a pivotal element of the Zapata experience and an exciting arena to exceed guest expectations.

PRIMARY RESPONSIBILITIES

  • Go above and beyond to ensure all guests’ requests and needs are met and ideally exceeded.
  • Build professional friendships and relationships with all guests, get to know them and details about their lives, families and interests and communicate this information to be recorded in guest files.
  • Be familiar with all guests arriving at the ranch respective to any dietary needs or special dining requests, such as small children.
  • Consistently communicate any issues related to guests that arise, even if they were quickly solved, to the Ranch Manager.
  • Oversee smooth running of the kitchen and dining experience for guests and also for behind the scenes operations.
  • Directly manage all kitchen and dining staff, including management of their hours, their training and performance reviews.
  • Work with the Lead Chef to oversee ordering and associated systems.
  • Print and analyze a dining budget report weekly.
  • Ensure all dining areas are clean, organized and meeting a high aesthetic standard, working with housekeepers and other kitchen staff as needed.
  • Oversee all cleaning schedules with the kitchen team and ensure they are executed on time.
  • Be aware of food waste and bring to the Lead Chef and Ranch Manager’s attention as needed.
  • Manage partner and contractor relationships (Valley Food Hub, Shamrock, local producers, etc.)
  • Manage dining atmosphere (music, flowers, lighting, table settings).
  • Lead your serving team as a head server, setting a high standard of warm, friendly, intuitive hospitality.
  • Train all dining employees at the start of the season and refresh training as needed.
  • Educate others on Ranchlands’ mission and other ventures, such as Ranchlands Meat

DESIRED KNOWLEDGE, SKILLS & EXPERIENCE

  • Experience managing staff
  • 6+ months serving or dining experience
  • Interest in local foods and the role they play in land conservation

MINIMUM QUALIFICATIONS

  • Relevant past work experience of 2 years.
  • Managerial/supervisory experience of 2 years.
  • Ability to operate (or be trained to operate) within Asana and Cloudbeds. Asana and Cloudbeds serve as Ranchlands’ project/team management and bookings software and are relied upon heavily for communication across teams.
  • Experience managing a team budget.

WORK SCHEDULE + TIME OFF

This is a seasonal (March 1-October 31), full-time exempt position that entails at least 40 hours per week including nights and weekends.

Regular working hours are 12 PM – 8 PM, 5 days per week, and additional morning shifts.

Specific work schedules are set on a weekly basis and will vary according to the needs of the business; staff must be willing and able to adapt to meet a flexible weekly schedule.

At least one day off per week.

Additional ten (10) days paid time off may be requested within the season, with approval by the Ranch Manager being contingent upon the ability to meet guest needs and coordination of staff schedules across all departments.

HOUSING
This position will be provided a residential room in one of the ranch buildings, inclusive of all utilities.
