We are looking for an experienced food service manager to re-imagine the food service at our club. This person must have extensive experience in cooking and managing a kitchen. We will serve only the highest quality products, prepared in the most appetizing manor. Our membership prefers “Country Style” cooking and are very appreciative of meals done well. We only use the choicest cuts of meats and all vegetables should be prepared using the freshest available. Seldom, if ever should “canned” or processed items be used. This position will interact closely with membership and must have a love of people, serving great food, and always putting your best foot forward.

Primary Duties

• Preparing, planning and sending out weekly menus to the membership. Menus are to be sent each week, no later than Tuesday
• Preparing tasteful, nutritious meals for club members
• Overseeing all aspects of the food service operations
• Managing/scheduling employees (will work with general manager to fill positions)
• Maintaining a clean work environment – Keeping kitchen and dining area clean each day
• Ordering food and supplies
• Insuring all employees are properly certified and facility meets Texas Health Code

Regulations

• Working within a budget
• Coordinating and keeping accurate records of reservations and meals served
• Creating a welcoming friendly atmosphere for those dining

Other Duties

• Answering telephone on weekends
• Assisting members with various needs i.e. getting keys, opening rooms, contacting other staff when needed
• Promote an attitude of professionalism among staff

Skills

• Must be a “people” person
• Proven experience as cook
• Experience in using cutting tools, cookware and bakeware
• Knowledge of various cooking procedures and methods (grilling, baking, Sous Vide etc.)
• Ability to follow all sanitation procedures
• Ability to work in a team
• Very good communication skills
• Excellent physical condition and stamina
• High school diploma or equivalent; Diploma from a culinary school will be an advantage

Typical meal service at begins with the Friday evening dinner. Saturday, we serve Breakfast to order, Lunch and a dinner as well. Sunday is breakfast to order and a lunch. Meals are based upon reservations that come in throughout the week. Occasionally, there will be walk-in’s that did not make a reservation so we always prepare just a little bit extra. Sometimes, there may be those on a special diet that cannot eat the main entrée so, we always offer the option of a chicken breast or a hamburger for those members. Meal times are as follows: Breakfast 7-9AM, Lunch 12-1:30, and Dinner 6-8 or 7-9 during daylight savings time. There are times when holidays dictate that special meals be prepared as well.

Holiday meals include:

• Easter Sunday
• Memorial Day Picnic
• Independence Day Picnic
• Labor Day Brunch
• Thanksgiving
• New Year’s Eve Party
• New Year’s Day Brunch

For these Holiday and Special Events, we will work with a caterer. It will be the food service managers role to ensure coordination with caterer and oversee the event.

There are also several Club functions that dictate special meal preparations such as:

• Men’s Fishing tournament – every other year, Spring
• Cast-n-Blast – May occasional
• Family Fishing Tournament – occasional
• Women’s Fishing Tournament – every other year, Fall
• Annual Hunting Banquet – end of October
• Occasional other members functions – Weddings, Anniversaries etc.

The kitchen will be closed on Mondays and Tuesdays unless a holiday or other scheduled event occurs on these days. Reservations for six or more persons may be made for Wednesdays and Thursdays if reservations are coordinated with ample time for preparation. If reservations are made for non-regularly scheduled meal times/days, there will be a 20% surcharge to recover additional labor costs.

Our goal for the food service operation is to provide top quality meals that help promote the camaraderie and fellowship of members while visiting the club. We want meals that are “like Grandma used to make”.
