Double Diamond X Ranch
Double Diamond X Ranch is looking for a Head Cook/Kitchen Manager to lead the DDX farm-to-table dining program. This program integrates local, organic agriculture into a scratch kitchen environment and relies heavily on ranch-grown organic heirloom produce and herbs, and locally-raised organic meats.
The Head Cook/Kitchen Manager is responsible for all aspects of daily food preparation and service for our guests, including breakfast, dinner, and event catering. Lunch is generally not provided except for guests and guides on full-day guided trips. Open-fire cookouts occur regularly, so the Head Cook must be comfortable starting and tending an outdoor fire, and dealing with difficult weather conditions while preparing meals.
Responsibilities typically include harvest and preparation of produce, preparation of house-made dressings and sauces, quality preparation of high-volume items such as steak and specialty burgers, tracking of ingredient needs, creative use of freshly available ingredients, quality control and hygienic standards, equipment maintenance, and top-quality service and guest attendance. Other responsibilities may include curing or cold-smoking of meats or cheeses, and preparation of fresh breads and pasta. This is a seasonal position extending from late-May through mid September, with the possibility of yearly renewal. Room and all utilities, a weekly food allowance, along with tips and salary commensurate with experience, will be provided.
The ideal applicant for this position is someone who considers him- or herself to be a passionate cook, energetic, friendly, and outgoing with a good sense of humor, and who has interest in being a part of a true farm-to-table operation. The Head Cook must have a friendly and positive attitude. Socializing with guests during meals and after cookouts is a must.
