The Opportunity
We’re seeking an exceptional Sous Chef who understands that great food is central to the ranch experience. You’ll craft memorable dining experiences for hunting parties celebrating their trophies, corporate executives strategizing their next move, families creating traditions, and couples celebrating life’s milestones—often serving wild game alongside upscale American fare in our intimate lodge settings.
This role requires someone who thrives in a dynamic environment where menus adapt to the day’s hunt, dietary preferences shift with each guest group, and every meal is an opportunity to exceed expectations. If you have experience working at a hunting ranch or similar outdoor hospitality venue, you understand the unique rhythm and resourcefulness this position demands.
What You’ll Do
Culinary Leadership
- Lead kitchen operations to deliver exceptional dining experiences that become a highlight of every guest’s stay
- Develop and execute seasonal menus showcasing local Texas ingredients, wild game, and upscale American cuisine that reflects the character and spirit of Cedar Cove Ranch
- Prepare and oversee food preparation for diverse groups—from intimate dinners for six to events for 40+ guests—ensuring the highest standards of quality and presentation
Operations & Management
- Manage food inventory, costs, and ordering to meet budgetary targets while maintaining premium quality
- Take a proactive approach to inventory management, monitoring stock levels and conducting regular assessments to minimize waste in our remote ranch setting
- Maintain an impeccably clean, organized, and sanitary kitchen environment in compliance with all health and safety regulations
- Optimize food and beverage margins through strategic planning and efficient operations
Guest Experience
- Personalize dining experiences by thoughtfully considering guest preferences, dietary restrictions, and special occasions
- Collaborate seamlessly with ranch staff to coordinate meals around hunting schedules, corporate meetings, and special events
- Demonstrate resourcefulness and adaptability when responding to last-minute changes or unique guest requests
- Embody a “whatever it takes” attitude to ensure service meets the highest standards
Professional Growth
- Stay current on culinary trends, techniques, and best practices
- Bring creativity and innovation to the menu while honoring Texas traditions and ranch hospitality
What We’re Looking For
Required Qualifications:
- Proven experience as a Sous Chef, Chef de Cuisine, or similar leadership role in a high-end, luxury dining environment
- Previous experience working at a hunting ranch, sporting lodge, guest ranch, or similar outdoor hospitality venue strongly preferred
- Strong culinary skills with expertise in upscale American fare and, ideally, wild game preparation
- Excellent leadership and communication abilities with a talent for motivating and inspiring your team
- Solid understanding of kitchen management including inventory control, cost management, and food safety protocols
- Creative menu development skills with a focus on seasonality, local ingredients, and innovation
- Ability to thrive in a fast-paced, ever-changing environment while managing multiple priorities with meticulous attention to detail
- Flexibility to work weekends, holidays, and irregular hours as dictated by guest bookings
Preferred:
- Culinary degree or equivalent certification
- Experience with game processing and preparation
- Proficiency with Microsoft Excel and digital calendar management for planning and scheduling
